Cook spaghetti according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

While pasta cooks, heat olive oil in a skillet over medium heat. Add pancetta (or bacon) and cook until crispy. Add minced garlic and cook for 1 minute until fragrant. Remove from heat.

In a bowl, whisk together eggs, heavy cream, grated Parmesan cheese, and black pepper.

Add the drained spaghetti to the skillet with the pancetta and garlic. Toss to combine.

Pour the egg and cream mixture over the hot pasta, tossing quickly to coat. Add reserved pasta water, a little at a time, to create a creamy sauce. The heat from the pasta will cook the eggs gently.

Serve immediately, garnished with extra Parmesan cheese and black pepper.
