Quick Pesto Pasta with Cherry Tomatoes

  • Spaghetti400g
  • Store-bought basil pesto200g
  • Cherry tomatoes, halved250g
  • Extra virgin olive oil2 tbsp
  • Saltto taste
  • Black pepperto taste
  • Red pepper flakes (optional)pinch

    Cook spaghetti in a large pot of salted boiling water according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.

    While the pasta is cooking, place the store-bought pesto in a large bowl.

    Drain the pasta and add it directly to the bowl with the pesto. Add the halved cherry tomatoes and 2 tbsp of extra virgin olive oil.

    Toss everything together well. Add a splash of the reserved pasta water if needed to loosen the sauce and help it coat the pasta.

    Season with salt, black pepper, and optional red pepper flakes to taste. Serve immediately.
