Prepare the pizza dough according to your preferred recipe, allowing for at least 1-2 hours of rising time.

Preheat your oven to the highest possible temperature (ideally 250°C/480°F or higher), with a pizza stone or steel inside if available.

Stretch the pizza dough into a round shape, about 12-14 inches in diameter, leaving a slightly thicker edge for the crust.

Spread the crushed San Marzano tomatoes evenly over the dough, leaving a small border for the crust. Season lightly with salt.

Tear or slice the fresh mozzarella and distribute it evenly over the tomato sauce.

Drizzle with extra virgin olive oil.

Carefully transfer the pizza to the preheated oven (onto the pizza stone/steel if using).

Bake for 7-12 minutes, or until the crust is golden brown and puffed, and the cheese is melted and bubbly.

Remove from oven, scatter fresh basil leaves over the top, and season with a little black pepper if desired. Slice and serve immediately.
