- Mascarpone cheese500g
- Eggs (yolks)4 large
- Granulated sugar100g
- Ladyfingers (Savoiardi)200g
- Strong brewed coffee (espresso)300ml
- Marsala wine or dark rum50ml
- Unsweetened cocoa powder2 tbsp
- Salt1 pinch

Whisk egg yolks and sugar in a heatproof bowl over a double boiler until pale and thickened.

Remove from heat and let cool slightly. Gently fold in the mascarpone cheese until smooth.

In a separate bowl, mix the cooled coffee with Marsala wine or rum.

Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.

Arrange a layer of soaked ladyfingers in the bottom of a serving dish.

Spread half of the mascarpone cream mixture over the ladyfingers.

Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.

Cover and refrigerate for at least 4 hours, or preferably overnight.

Just before serving, dust generously with unsweetened cocoa powder.
