- Shredded Cheese (Oaxaca, Monterey Jack, or a blend)1 cup
- Butter or Oil (for cooking)1 tbsp
- Saltto taste
- Black Pepperto taste

Heat a lightly oiled or buttered skillet or griddle over medium heat.

Place one tortilla in the skillet. Sprinkle half of the cheese evenly over the tortilla.

Fold the other tortilla in half over the cheese, or place a second tortilla on top and sprinkle the remaining cheese over it.

Cook for 2-3 minutes per side, until the tortilla is golden brown and the cheese is melted and gooey. If using two tortillas, flip the entire quesadilla.

Remove from skillet, let it rest for a minute, then cut into wedges.

Season with salt and pepper to taste.
