Roast the poblano peppers directly over a flame or under a broiler until charred on all sides. Place in a bowl, cover, and let steam for 10 minutes. Peel, seed, and cut into strips (rajas).

Heat 1/2 tbsp oil in a skillet over medium heat. Add sliced onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.

Add the poblano strips to the skillet with the onions and garlic. Season with salt and pepper. Cook for 2-3 minutes to combine flavors.

Wipe the skillet clean or use a separate one. Heat the remaining 1/2 tbsp oil or butter over medium heat.

Place one tortilla in the skillet. Top with half of the cheese, followed by half of the poblano and onion mixture.

Fold the tortilla in half or top with another tortilla. Cook for 2-3 minutes per side until golden brown and cheese is melted.

Repeat with the remaining ingredients. Cut into wedges and garnish with cilantro if desired.
