  • Beef chuck roast, cut into 1-inch cubes2 lbs
  • Dried ancho chilies, stemmed and seeded4
  • Dried guajillo chilies, stemmed and seeded2
  • Beef broth4 cups
  • Onion, chopped1 large
  • Garlic, minced4 cloves
  • Canned diced tomatoes1 (14.5 oz) can
  • Ground cumin2 tbsp
  • Dried oregano1 tbsp
  • Cocoa powder (unsweetened)1 tbsp
  • Vegetable oil2 tbsp
  • Saltto taste
  • Black pepperto taste

    Rehydrate dried chilies in hot water for 20 minutes. Blend chilies with 1 cup of beef broth until smooth.

    Sear beef cubes in vegetable oil in a large pot or Dutch oven until browned on all sides. Remove beef and set aside.

    Add chopped onion to the pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.

    Return beef to the pot. Stir in the chili-blended mixture, remaining beef broth, diced tomatoes, cumin, oregano, and cocoa powder.

    Bring to a simmer, then reduce heat to low, cover, and cook for at least 2-3 hours, or until beef is very tender. Stir occasionally.

    Season with salt and black pepper to taste before serving.
