- Dried Chickpeas2 cups
- Onion1 medium
- Garlic4 cloves
- Fresh Parsley1/2 cup, packed
- Harissa Paste2-3 tbsp
- Cumin1 tsp
- Coriander1 tsp
- Lemon Zest1 tsp
- Saltto taste
- Black Pepperto taste
- Vegetable Oilfor frying

Soak dried chickpeas in water overnight. Drain thoroughly.

Pulse chickpeas in a food processor until coarsely ground.

Add chopped onion, garlic, parsley, harissa paste, cumin, coriander, lemon zest, salt, and pepper. Pulse until combined.

Form the mixture into small balls or patties.

Heat about 2-3 inches of vegetable oil in a deep pot or Dutch oven to 350°F (175°C).

Carefully fry falafel in batches until deep golden brown and cooked through, about 3-5 minutes per side.

Remove falafel with a slotted spoon and drain on paper towels.
