
Traditional Kadayif (Knafeh)

A classic Middle Eastern dessert made with shredded phyllo dough (kadaif) layered with cheese and soaked in a sweet sugar syrup. This version uses traditional ingredients for an authentic taste.

- Kadaif pastry (shredded phyllo dough)500g
- Unsalted butter, melted200g
- Nabulsi cheese (or Akkawi cheese), unsalted and rindless400g
- Mozzarella cheese (low moisture)100g
- Sugar400g
- Water250ml
- Lemon juice1 tbsp
- Rose water (optional)1 tsp
- Ground pistachios (for garnish)50g

Prepare the syrup: In a saucepan, combine sugar and water. Bring to a boil, then reduce heat and simmer for 10 minutes. Stir in lemon juice and rose water (if using). Let cool completely.

Prepare the cheese: If using Nabulsi or Akkawi cheese, soak it in water for a few hours or overnight to remove excess salt, changing the water several times. Drain and pat dry. Grate or finely chop the cheese. Mix with grated mozzarella.

Prepare the kadaif: Gently unravel the kadaif pastry strands. If they are frozen, let them thaw slightly. Place the kadaif in a large bowl and pour the melted butter over it. Toss well to coat every strand evenly.

Assemble the dessert: Grease a round baking pan (approx. 10-12 inches) with butter. Press half of the buttered kadaif evenly into the bottom of the pan. Spread the cheese mixture evenly over the kadaif layer.

Top with the remaining kadaif, pressing gently to cover the cheese. Drizzle any remaining butter over the top.

Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until the top is golden brown and crispy.

Immediately after removing from the oven, pour the cooled syrup evenly over the hot kadaif. It will sizzle. Let it soak for at least 15-20 minutes.

Garnish with ground pistachios and serve warm.
