- Bell pepper1 red, chopped

- Crushed tomatoes1 can (28 oz)
- Saltto taste
- Black pepperto taste
- Eggs4-6
- Fresh cilantro or parsleyfor garnish
- Feta cheeseoptional, crumbled

Heat olive oil in a large oven-safe skillet over medium heat. Add onion and bell pepper and cook until softened, about 5-7 minutes.

Add garlic, cumin, paprika, and cayenne pepper. Cook for 1 minute until fragrant.

Pour in the crushed tomatoes. Season with salt and black pepper. Bring to a simmer and cook for 10 minutes, allowing the sauce to thicken slightly.

Make wells in the sauce and crack the eggs into them. Cover the skillet and cook for 5-8 minutes, or until the egg whites are set but the yolks are still runny.

Garnish with fresh cilantro or parsley and crumbled feta cheese, if desired. Serve immediately, directly from the skillet.
