- Rice vinegar1 tbsp
- Green onions2 stalks, thinly sliced
- Avocado1, sliced
- Cucumber1/2, thinly sliced
- Toasted sesame seeds1 tbsp
- Saltto taste
- Black pepperto taste

Cook sushi rice according to package directions. Let cool slightly.

While rice cooks, cut salmon into 1-inch cubes.

In a medium bowl, whisk together soy sauce, sesame oil, and rice vinegar.

Add salmon cubes to the marinade and gently toss to coat. Let marinate for at least 15 minutes.

Assemble the poke bowls: Divide the cooked sushi rice among four bowls. Top with marinated salmon, sliced avocado, and cucumber.
