- Phyllo dough sheets1 package (approx. 400-500g)
- Leeks400g
- Sirene cheese250g
- Smoked bacon150g
- Eggs3 large
- Butter100g
- Vegetable oil50ml
- Saltto taste
- Black pepperto taste

Dice the bacon and cook in a pan until crispy. Remove bacon, leaving some rendered fat in the pan.

Thinly slice the leeks and sauté them in the bacon fat until softened.

Crumble the sirene cheese into a bowl. Add the sautéed leeks, crispy bacon, beaten eggs, salt, and pepper. Mix well.

Melt the butter. Brush a baking dish with melted butter and oil.

Layer phyllo sheets as in the traditional recipe, brushing each with butter, creating a base.

Spread half of the leek, cheese, and bacon filling.

Layer more phyllo sheets, brushing each.

Spread the remaining filling.

Top with the final phyllo sheets, brushing each. Tuck edges.

Score the top into portions.

Bake in a preheated oven at 180°C (350°F) for 35-45 minutes, or until golden brown and crispy.
