- Granulated sugar1.5 cups
- Water0.5 cup
- Cardamom powder1 teaspoon
- Pistachios, chopped0.5 cup
- Vanilla extract1 teaspoon

In a saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves. Bring to a boil and cook for about 5-7 minutes until it reaches the soft ball stage (235°F / 113°C).

Remove the syrup from heat. Stir in cardamom powder and vanilla extract.

In a separate bowl, whisk the tahini paste until smooth.

Slowly pour the hot syrup into the tahini paste while whisking continuously until well combined and the mixture thickens.

Fold in the chopped pistachios.

Pour the mixture into a parchment-lined loaf pan or a serving dish. Press down firmly and evenly.

Let it cool completely at room temperature for at least 2-3 hours, or refrigerate for faster setting.

Once set, cut into desired shapes and serve.
