  • Granulated sugar3/4 cup
  • Water1/4 cup
  • Sweetened condensed milk1 can (14 oz)
  • Evaporated milk1 can (12 oz)
  • Large eggs3
  • Vanilla extract1 tsp
  • Saltpinch

    Preheat oven to 350°F (175°C). Prepare a hot water bath (bain-marie).

    Make the caramel: In a saucepan, combine 1/2 cup sugar and 1/4 cup water. Cook over medium-high heat until amber. Pour into 4 heatproof bowls or ramekins.

    Make the custard: In a bowl, whisk together eggs, remaining 1/4 cup sugar, vanilla extract, and salt.

    In a separate bowl, combine sweetened condensed milk and evaporated milk. Gradually whisk this mixture into the egg mixture.

    Pour the custard evenly into the prepared bowls over the caramel.

    Place bowls in the hot water bath. Bake for 30-35 minutes, or until set.

    Let cool slightly, then refrigerate for at least 2 hours.

    To serve, invert onto plates.
