- Egg yolks4 large
- Granulated sugar1/3 cup + for topping
- Vanilla extract1 teaspoon

Preheat oven to 325°F (160°C).

In a bowl, whisk together egg yolks, 1/3 cup sugar, vanilla extract, and salt until combined.

Gently heat the heavy cream in a saucepan until warm, but not boiling.

Slowly pour the warm cream into the egg yolk mixture while whisking constantly to temper the eggs.

Pour the mixture evenly into four ramekins.

Place ramekins in a baking dish and fill with hot water halfway up the sides.

Bake for 25-35 minutes, until the edges are set and the center is slightly wobbly.

Remove from water bath and let cool. Chill for at least 1 hour.

Sprinkle sugar evenly over the top of each chilled custard. Torch until caramelized.
