A simplified version of Dobrudzhanki, this recipe uses pre-made puff pastry for a quicker preparation while retaining the classic sirene cheese and egg filling.

- Sirene cheese (Bulgarian white brine cheese)300g
- Eggs2
- Fresh dill, chopped2 tbsp
- Saltpinch
- Black pepperpinch
- Egg wash (1 egg beaten)1

Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.

Crumble the sirene cheese into a bowl. Add the eggs, chopped dill, salt, and pepper. Mix well.

Unroll the puff pastry sheets. Cut each sheet into 6 equal squares.

Place a spoonful of the cheese filling onto the center of each pastry square.

Fold the pastry squares diagonally to form triangles, pressing the edges firmly to seal. You can crimp with a fork for extra security.

Place the pastries on the prepared baking sheet. Brush the tops with egg wash.

Bake for 15-20 minutes, or until golden brown and puffed.
