A rich and airy classic chocolate mousse, made with high-quality dark chocolate, eggs, and cream for an intensely decadent dessert.

- Dark chocolate (70% cocoa)200g
- Eggs (separated)3 large
- Heavy cream200ml
- Granulated sugar50g
- Salt1 pinch
- Butter (unsalted)25g

Melt dark chocolate and butter in a heatproof bowl over simmering water. Stir until smooth.

In a separate bowl, whisk egg yolks with half of the sugar until pale and creamy.

Gently fold the melted chocolate mixture into the egg yolk mixture.

In another clean bowl, whip the heavy cream until soft peaks form.

In a third clean bowl, whisk egg whites with a pinch of salt until foamy. Gradually add the remaining sugar and whisk until stiff, glossy peaks form.

Gently fold the whipped cream into the chocolate mixture, followed by the whipped egg whites, being careful not to deflate the mixture.

Spoon the mousse into individual serving glasses or ramekins.

Chill in the refrigerator for at least 2-3 hours, or until set.

Serve chilled, optionally garnished with chocolate shavings or a dollop of whipped cream.
