- Chicken or vegetable broth1.5 liters
- Garlic4 cloves, minced
- Butter1 tablespoon
- All-purpose flour1 tablespoon
- Milk100 ml
- Vinegarto taste
- Red pepper flakesto taste
- Saltto taste
- Black pepperto taste
- Fresh parsley, choppedfor garnish

Cut the pre-cooked tripe into bite-sized pieces.

In a pot, melt butter and sauté minced garlic until fragrant (about 1 minute).

Stir in flour and cook for 1 minute to make a quick roux.

Gradually whisk in the broth and milk until smooth. Bring to a simmer.

Add the tripe pieces to the simmering broth. Cook for 15-20 minutes to allow flavors to meld.
