- Red lentils1.5 cups
- Onion1 medium
- Carrots2 medium
- Celery stalk1
- Garlic2 cloves
- Vegetable broth6 cups
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsley or dill for garnisha small bunch

Rinse red lentils thoroughly.

Finely chop the onion, dice the carrots and celery. Mince the garlic.

Heat olive oil in a pot over medium heat. Add onion, carrots, and celery, and sauté until softened, about 7-10 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Add the rinsed red lentils and vegetable broth. Bring to a boil.

Reduce heat, cover, and simmer for 20-25 minutes, or until lentils are very soft and have broken down, thickening the soup.

Season with salt and pepper to taste. If a smoother consistency is desired, use an immersion blender to partially blend the soup.

Serve hot, garnished with fresh parsley or dill.
