Rinse lentils thoroughly.

Clean and slice the mushrooms. Finely chop the onion and carrot. Mince the garlic.

Heat olive oil in a large pot over medium-high heat. Add mushrooms and cook until browned and tender, about 8-10 minutes. Remove mushrooms and set aside.

In the same pot, add onion and carrot, sauté until softened, about 5-7 minutes.

Add minced garlic, smoked paprika, and dried thyme. Cook for 1 minute until fragrant.

Add the rinsed lentils and vegetable broth. Bring to a boil.

Reduce heat, cover, and simmer for 45-55 minutes, or until lentils are tender.

Stir in the cooked mushrooms. Season with salt and pepper to taste.
