- Fresh nettle leaves300g
- Pre-cooked or leftover mashed potatoes200g
- Onion1 small
- Garlic1 clove
- Chicken or vegetable broth1 liter
- Milk or light cream50ml
- Olive oil1 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Wash nettle leaves thoroughly and blanch in boiling water for 1 minute. Drain and chop.

Finely chop onion and garlic.

Heat olive oil in a pot over medium heat. Sauté onion until translucent, then add garlic for 30 seconds.

Add broth and bring to a simmer. Stir in the pre-cooked mashed potatoes until dissolved.

Add the chopped nettles and cook for 5 minutes.

Stir in milk or light cream. Season with salt and pepper. Heat through.
