  • Fresh nettle leaves300g
  • Pre-cooked or leftover mashed potatoes200g
  • Onion1 small
  • Garlic1 clove
  • Chicken or vegetable broth1 liter
  • Milk or light cream50ml
  • Olive oil1 tbsp
  • Saltto taste
  • Black pepperto taste
  • Fresh parsleyfor garnish

    Wash nettle leaves thoroughly and blanch in boiling water for 1 minute. Drain and chop.

    Finely chop onion and garlic.

    Heat olive oil in a pot over medium heat. Sauté onion until translucent, then add garlic for 30 seconds.

    Add broth and bring to a simmer. Stir in the pre-cooked mashed potatoes until dissolved.

    Add the chopped nettles and cook for 5 minutes.

    Stir in milk or light cream. Season with salt and pepper. Heat through.

    Serve hot, garnished with fresh parsley.
