  • Bell peppers4 large
  • Canned pre-cooked white beans2 cans (approx. 15 oz each), drained and rinsed
  • Cooked rice1 cup
  • Onions1 large
  • Tomato sauce1 cup
  • Olive oil2 tablespoons
  • Smoked paprika1.5 teaspoons
  • Fresh dill2 tablespoons chopped
  • Saltto taste
  • Black pepperto taste
  • Water1/2 cup

    Preheat oven to 190°C (375°F). Cut bell peppers in half lengthwise, remove seeds and membranes.

    Finely chop the onion and sauté in olive oil until soft. In a bowl, combine the sautéed onion, drained beans, cooked rice, tomato sauce, smoked paprika, chopped dill, salt, and pepper.

    Spoon the filling into the pepper halves. Place the filled peppers in a baking dish.

    Pour water into the bottom of the baking dish. Cover with foil.

    Bake for 30-40 minutes, or until peppers are tender. Remove foil for the last 10 minutes.
