- Pork shoulder600g
- Onions2 medium
- Red bell peppers2
- Lyutenitsa4 tbsp
- Garlic4 cloves
- Dry red wine150ml
- Pork broth or water1 cup
- Chili flakes1/2 tsp (or to taste)
- Smoked paprika1 tsp
- Vegetable oil3 tbsp
- Black pepperto taste
- Saltto taste
- Fresh parsleyfor garnish

Cut pork shoulder into 2-3 cm cubes.

Slice onions and red bell peppers. Mince garlic.

Heat vegetable oil in a heavy-bottomed pot or Dutch oven over medium-high heat.

Brown the pork cubes in batches. Remove and set aside.

Add onions and bell peppers to the pot and sauté until softened, about 8-10 minutes.

Add minced garlic, chili flakes, and smoked paprika. Cook for 1 minute until fragrant.

Stir in the Lyutenitsa until well combined.

Return the pork to the pot. Pour in red wine and scrape up any browned bits from the bottom.

Add pork broth or water. Season with salt and pepper.

Bring to a simmer, then cover and reduce heat to low. Cook for 1.5 - 2 hours, or until pork is very tender.

Adjust seasoning if needed. Garnish with fresh parsley and serve hot.
