
Classic Chicken Fricassee

- Chicken thighs, bone-in, skin-on4
- Butter4 tbsp
- All-purpose flour3 tbsp
- Yellow onion, finely chopped1
- Mushrooms, sliced8 oz
- Chicken broth2 cups
- Heavy cream1 cup
- Egg yolks2
- Lemon juice1 tbsp
- Fresh parsley, chopped2 tbsp

Pat chicken thighs dry and season with salt and pepper.

In a large Dutch oven or pot, melt 2 tbsp butter over medium-high heat. Sear chicken thighs until golden brown on all sides. Remove chicken and set aside.

Add remaining 2 tbsp butter to the pot. Add chopped onion and cook until softened, about 5 minutes.

Add sliced mushrooms and cook until browned, about 5-7 minutes.

Sprinkle flour over the vegetables and stir well, cooking for 1 minute to form a roux.

Gradually whisk in chicken broth until smooth. Bring to a simmer.

Return chicken thighs to the pot. Reduce heat to low, cover, and simmer for 30-40 minutes, or until chicken is cooked through and tender.

In a small bowl, whisk together heavy cream and egg yolks.

Temper the egg yolk mixture by gradually whisking in about 1/2 cup of the hot liquid from the pot. Then, pour the tempered mixture back into the pot, stirring constantly.

Cook gently over low heat, stirring, until the sauce thickens slightly. Do not boil.

Stir in lemon juice and chopped parsley. Season with salt and pepper to taste.
