  • Chicken thighs500g
  • Fresh or frozen peas300g
  • Onion1 medium
  • Garlic2 cloves
  • Chicken broth500ml
  • Olive oil2 tbsp
  • Fresh dill1/4 cup, chopped
  • Fresh mint2 tbsp, chopped (optional)
  • Saltto taste
  • Black pepperto taste
  • Wateras needed

    Cut chicken thighs into bite-sized pieces.

    Finely chop the onion and mince the garlic.

    Heat olive oil in a large pot or Dutch oven over medium heat. Add the chicken pieces and brown them on all sides.

    Add the chopped onion to the pot and sauté until softened, about 5-7 minutes.

    Stir in the minced garlic and cook for 1 minute until fragrant.

    Pour in the chicken broth. Bring to a simmer, then reduce heat, cover, and cook for 20 minutes, or until chicken is almost cooked through.

    Add the peas (if using frozen, no need to thaw). Continue to simmer, uncovered, for another 10-15 minutes, or until peas are tender and the sauce has slightly thickened.

    Stir in the chopped fresh dill and mint (if using). Season with salt and black pepper to taste.
