Ingredients
- All-purpose flour6 cups
- Granulated sugar3/4 cup
- Active dry yeast2 1/4 teaspoons
- Warm milk1 1/2 cups
- Unsalted butter, softened3/4 cup
- Eggs2 large
- Ground cardamom1 teaspoon
- Salt1 teaspoon
- Brown sugar1/2 cup
- Ground cinnamon2 tablespoons
- Pearl sugar (or coarse sugar)for topping
- Egg wash (1 egg beaten with 1 tbsp water)for topping

In a small bowl, dissolve yeast in warm milk. Let stand for 5-10 minutes until foamy.

In a large bowl, combine flour, granulated sugar, cardamom, and salt. Make a well.

Pour yeast mixture into the well. Add softened butter and eggs. Mix until a shaggy dough forms.

Turn dough onto a lightly floured surface and knead for 10-12 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1.5-2 hours, or until doubled.

Prepare filling: In a medium bowl, mix brown sugar and cinnamon.

Punch down dough. Turn onto a lightly floured surface and roll into a 12x18 inch rectangle.

Spread softened butter evenly over the dough, leaving a border. Sprinkle cinnamon-sugar mixture over the butter.

Roll up tightly from the long side. Pinch seam to seal.

Cut the roll into 15 equal slices.

Place slices cut-side up in greased baking sheets or muffin liners.

Cover and let rise for another 45-60 minutes.

Preheat oven to 400°F (200°C). Brush buns with egg wash and sprinkle generously with pearl sugar.
