Ingredients
- graham cracker crumbs1.5 cups
- granulated sugar0.25 cup
- unsalted butter, melted6 tablespoons
- cream cheese, softened32 oz

- sour cream1 cup
- vanilla extract1 teaspoon

Preheat oven to 350°F (175°C).

For the crust: In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture evenly into the bottom of a 9-inch springform pan.

Bake the crust for 8-10 minutes. Remove from oven and let cool.

In a large bowl, beat softened cream cheese and 1.5 cups sugar with a stand mixer until smooth.

Beat in eggs one at a time, mixing well after each addition. Stir in sour cream and vanilla extract until just combined.

Pour the filling over the cooled crust.

Bake for 55-65 minutes, or until the edges are set and the center is slightly jiggly.

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.

Remove from oven and cool completely on a wire rack. Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
