Ingredients
- All-purpose flour2 cups
- Granulated sugar1/4 cup
- Active dry yeast2 1/4 teaspoons
- Warm milk1 1/2 cups
- Eggs, separated2 large
- Melted unsalted butter1/2 cup
- Salt1/2 teaspoon
- Vanilla extract1 teaspoon

In a small bowl, dissolve yeast in warm milk. Let stand for 5-10 minutes until foamy.

In a large bowl, whisk together flour and granulated sugar. Add salt.

In a separate bowl, whisk together egg yolks, melted butter, and vanilla extract.

Add the milk-yeast mixture and the egg yolk mixture to the dry ingredients. Stir until just combined. The batter will be thick.

In a clean bowl, beat egg whites until stiff peaks form.

Gently fold the beaten egg whites into the batter until just incorporated. Be careful not to overmix.

Preheat your waffle iron according to manufacturer's instructions.

Lightly grease the waffle iron. Pour about 1 cup of batter onto the hot waffle iron and cook until golden brown and crisp, about 5-7 minutes.
