Ingredients

- Apricots4
- Honey3 tbsp
- Butter1 tbsp
- Water2 tbsp
- Sugar1 tsp

Wash and pit the apricots. Chop them into small pieces.

In a saucepan, combine the chopped apricots, 2 tbsp of honey, and 2 tbsp of water. Bring to a simmer over medium-low heat.

Cook for 5-7 minutes, stirring occasionally, until the apricots have softened and the mixture has thickened into a compote. Remove from heat and stir in the remaining 1 tbsp of honey.

Toast the bread slices until golden brown. You can do this in a frying pan with a little butter (if available) or under a broiler if you have one, or simply toast them dry.

Spoon the warm apricot-honey compote over the toasted bread slices and serve immediately.
