Ingredients
- Soft cottage cheese1.5 cups
- Eggs1
- Honey3 tbsp
- Apricots2
- Salt1 pinch
- Cooking oil2 tbsp
- Oatmeal2 tbsp
- Sugar1 tsp

In a bowl, combine the soft cottage cheese, egg, pinch of salt, and 1 tbsp of honey. Mix thoroughly until well combined. If using, you can add 2 tbsp of oatmeal for texture, but it's optional.

Heat 1 tbsp of cooking oil in a frying pan over medium heat.

Form the cottage cheese mixture into 2-3 patties. Carefully place them in the hot pan and fry for about 3-4 minutes per side, until golden brown and slightly crispy.

While the cottage cheese is frying, slice the apricots.

Remove the fried cottage cheese patties from the pan and place them on serving plates. Drizzle with the remaining 2 tbsp of honey and top with fresh apricot slices.
