In a bowl, combine the soft cottage cheese, eggs, oatmeal, 1 tbsp of honey, and a pinch of salt. Mix well with a fork until a thick batter forms. If the batter is too thick, add a tablespoon of water.

Finely chop the apricots. Gently fold the chopped apricots into the batter.

Heat a frying pan over medium heat. Add a small amount of cooking oil.

Pour about 1/4 cup of batter per pancake onto the hot pan. Cook for 3-4 minutes per side, until golden brown and cooked through. Adjust heat as needed to prevent burning.
