Ingredients

In a large bowl, whisk together the buckwheat flour, all-purpose flour, and salt.

In a separate bowl, whisk the eggs, then whisk in the milk, water, and melted butter.

Gradually add the wet ingredients to the dry ingredients, whisking until smooth. Let the batter rest for at least 30 minutes (or up to 2 hours) at room temperature.

Heat a lightly oiled non-stick skillet or galette pan over medium-high heat.

Pour about 1/3 cup of batter into the hot skillet and swirl to create a thin, rustic circle. Cook for 2-3 minutes until the edges are set and slightly crisp.

Place a slice of ham in the center of the galette, then sprinkle with grated cheese. Crack an egg into the center.

Fold the edges of the galette up around the filling, creating a square shape, leaving the egg yolk exposed. Cook for another 3-5 minutes, until the egg is set and the cheese is melted.
