Ingredients
- Chicken breasts2 boneless, skinless
- All-purpose flour1/2 cup
- Eggs2 large
- Breadcrumbs (Panko)1 cup
- Grated Parmesan cheese1/2 cup
- Marinara sauce1.5 cups
- Mozzarella cheese (sliced or shredded)4 oz
- Olive oil1/4 cup

Preheat oven to 400°F (200°C).

Slice chicken breasts horizontally to create thinner cutlets. Pound lightly to an even thickness.

Set up three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.

Dredge each chicken cutlet first in flour, then dip in egg, and finally coat thoroughly with breadcrumb mixture.

Heat olive oil in a large oven-safe frying pan over medium-high heat. Fry chicken cutlets for 2-3 minutes per side until golden brown and mostly cooked through. Work in batches if necessary.

Remove chicken from the pan and place in a baking dish. Spoon marinara sauce over each cutlet, then top with mozzarella and Parmesan cheese.

Bake for 15-20 minutes, or until cheese is melted and bubbly and chicken is cooked through.
