Dip each chicken piece first into the egg mixture, ensuring it's fully coated, then dredge it in the seasoned flour mixture, pressing to adhere. Set aside on a wire rack.

Heat the oil or shortening in a large, heavy-bottomed skillet or Dutch oven over medium-high heat to 350°F (175°C).
