Ingredients
- Broccoli4 cups, chopped
- Cheddar Cheese2 cups, shredded
- Butter4 tablespoons
- All-purpose Flour1/4 cup
- Onion1 medium, chopped
- Garlic2 cloves, minced
- Chicken Broth4 cups
- Milk2 cups
- Saltto taste
- Black Pepperto taste

Melt butter in a large pot or Dutch oven over medium heat. Add chopped onion and cook until softened, about 5-7 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Whisk in the flour and cook for 1-2 minutes to create a roux.

Gradually whisk in the chicken broth until smooth.

Add the chopped broccoli and bring to a simmer. Cook until broccoli is tender, about 10-15 minutes.

Reduce heat to low. Stir in the milk and shredded cheddar cheese until the cheese is melted and the soup is smooth. Do not boil after adding cheese.
