Make the mango salsa: In a separate bowl, combine diced mango, red onion, minced jalapeño, chopped cilantro, 1 tbsp lime juice, and a pinch of salt. Mix gently and set aside.

Prepare the crema: Whisk together sour cream/crema, the remaining 1 tbsp lime juice, and a pinch of salt until smooth. Refrigerate.

Preheat grill or grill pan to medium-high heat. Lightly oil the grates.

Grill the marinated fish for 4-5 minutes per side, or until cooked through and slightly charred. Let rest for a few minutes, then flake into bite-sized pieces.
