Ingredients
- Chicken breast, thinly sliced1 lb
- Bell peppers (red, yellow, green), sliced2 cups
- Onion, sliced1 medium
- Lime juice2 tablespoons
- Olive oil2 tablespoons
- Chili powder1 tablespoon
- Cumin1 teaspoon
- Garlic powder1 teaspoon
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon
- Flour tortillas4-6
- Cilantro, choppedfor garnish

In a bowl, combine chicken slices with lime juice, 1 tablespoon olive oil, chili powder, cumin, garlic powder, salt, and pepper. Marinate for at least 15 minutes.

Heat the remaining 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

Add the sliced bell peppers and onion to the skillet. Stir-fry for 5-7 minutes until tender-crisp.

Remove vegetables from the skillet and set aside.

Add the marinated chicken to the hot skillet. Cook, stirring occasionally, until chicken is cooked through and slightly browned, about 5-7 minutes.

Return the vegetables to the skillet with the chicken and toss to combine. Cook for another 1-2 minutes to heat through.
