Ingredients
- Barley rusks (Paximadia)4 large
- Ripe tomatoes3 large
- Feta cheese or Mizithra cheese150g, crumbled
- Capers2 tbsp
- Extra virgin olive oil1/4 cup
- Dried oregano1 tsp
- Wateras needed
- Saltto taste
- Black pepperto taste

Lightly dampen the barley rusks with water. They should be softened but not mushy. Place one rusk on each serving plate.

Grate the ripe tomatoes using the large holes of a grater, discarding the skins. Season the grated tomato with a pinch of salt and pepper.

Spoon the grated tomato mixture generously over each softened rusk.

Crumble the feta or mizithra cheese over the tomatoes.

Scatter the capers over the cheese.

Drizzle generously with extra virgin olive oil.
