Ingredients
- Boneless, skinless chicken thighs or breast1.5 lbs
- Olive oil or vegetable oil2 tbsp
- Onion1 medium
- Garlic, minced2 cloves
- Ginger, grated1 tsp
- Tikka masala spice blend2 tbsp
- Crushed tomatoes15 oz can
- Coconut milk or heavy cream0.5 cup
- Saltto taste
- Black pepperto taste
- Fresh cilantrofor garnish

Cut chicken into bite-sized pieces. Season with salt and pepper.

Heat oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.

Add chopped onion to the same skillet and sauté until softened, about 5 minutes. Add minced garlic and grated ginger, cook for 1 minute until fragrant.

Stir in the tikka masala spice blend and cook for 30 seconds. Pour in the crushed tomatoes and bring to a simmer.

Stir in the coconut milk or cream. Return the cooked chicken to the skillet. Simmer for 10-15 minutes, allowing the sauce to thicken and flavors to combine.

Adjust seasoning with salt and pepper if needed. Garnish with fresh cilantro and serve immediately.
