- Ginger, grated1 tsp
- Tomato puree15 oz can
- Heavy cream1/2 cup
- Cilantro, choppedfor garnish
- Cayenne pepper1/4 tsp (optional)
Steps
- 1
Marinate the chicken: Cut chicken into 1-inch cubes. In a bowl, combine yogurt, lemon juice, garam masala, turmeric, cumin, grated ginger, minced garlic, and salt. Add chicken cubes and toss to coat. Marinate for at least 30 minutes, or preferably 2-4 hours in the refrigerator.
- 2
Cook the chicken: Thread marinated chicken onto skewers (if grilling) or cook in a lightly oiled frying pan or on a grill until cooked through and slightly charred. Set aside.
- 3
Make the sauce: In a large saucepan or Dutch oven, heat vegetable oil over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger, cook for 1 minute until fragrant.
- 4
Add tomato puree, garam masala, turmeric, cumin, cayenne pepper (if using), and salt. Cook for 5-10 minutes, stirring occasionally, until the sauce thickens slightly.
- 5
Stir in the cooked chicken and heavy cream. Simmer gently for 10-15 minutes, allowing the flavors to meld. Do not boil vigorously after adding cream.
- 6
Serve: Garnish with fresh chopped cilantro. Serve hot, traditionally with basmati rice or naan bread.
