Marinate the chicken: Cut chicken into bite-sized pieces. In a bowl, combine yogurt, lemon juice, garam masala, turmeric, cumin, cayenne pepper, and salt. Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours.

Cook the chicken: Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces in batches, searing until lightly browned on all sides. Remove chicken and set aside. Do not cook through.

Make the sauce: In the same skillet, add the remaining 1 tbsp of oil. Add chopped onion and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger, cook for 1 minute until fragrant.

Stir in crushed tomatoes, garam masala, turmeric, cumin, cayenne pepper, and salt. Bring to a simmer and cook for 10 minutes, stirring occasionally.

Return the seared chicken to the skillet. Stir in heavy cream. Simmer gently for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
