Ingredients
- Pre-cooked breakfast sausage, crumbled or diced1 lb
- Sweet potatoes, peeled and diced2 cups
- Red onion, diced1/2 cup
- Olive oil1 tablespoon
- Saltto taste
- Black pepperto taste
- Fresh parsley, chopped (for garnish)2 tablespoons

Heat olive oil in a large skillet over medium-high heat.

Add diced sweet potatoes and cook until tender and slightly browned, about 10-12 minutes. You may need to cover the skillet for a few minutes to help them cook through.

Add the pre-cooked sausage and diced red onion to the skillet. Season with salt and pepper.
