  • All-purpose flour150g
  • Cornstarch50g
  • Baking powder1/2 tsp
  • Cold sparkling water or lager250ml
  • Vegetable oil (for frying)1L
  • Saltto taste
  • Black pepperto taste
  • Lemon wedgesfor serving

Steps

    Preheat oven according to frozen french fry package instructions. Bake fries until nearly done.

    While fries bake, prepare the batter. Whisk together flour, cornstarch, and baking powder. Gradually whisk in cold sparkling water or lager until smooth.

    Season fish fillets with salt and pepper.

    Heat vegetable oil in a deep fryer or large pan to 180°C (350°F).

    Dip fish into the batter, ensuring it's fully coated. Let excess drip off.

    Carefully lower battered fish into the hot oil. Fry for 5-7 minutes, until golden brown and cooked through. Remove and drain.
