Ingredients
- Salmon fillets4 (6 oz each)
- Blackened seasoning blend3 tbsp
- Avocado oil2 tbsp
- Ripe mango, diced1 cup
- Red onion, finely diced1/4 cup
- Fresh cilantro, chopped2 tbsp
- Jalapeño, minced (seeds removed for less heat)1/2
- Lime juice1 tbsp
- Saltto taste

In a bowl, combine diced mango, red onion, cilantro, minced jalapeño, and lime juice. Season with salt and pepper. Mix gently and set aside.

Pat salmon fillets dry. Season generously on all sides with blackened seasoning, salt, and pepper.

Heat avocado oil in a large skillet over medium-high heat until very hot.

Carefully place salmon fillets in the hot skillet. Sear for 3-4 minutes per side, until a dark crust forms and salmon is cooked through. Add more oil if needed.
