Ingredients
- Canned salmon, drained and flaked15 oz
- Panko breadcrumbs1/2 cup
- Egg, lightly beaten1
- Red bell pepper, finely diced1/4 cup
- Green bell pepper, finely diced1/4 cup
- Onion, finely chopped1/4 cup
- Cajun seasoning1-2 teaspoons
- Cayenne pepper1/4 teaspoon (or to taste)
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon
- Canola oil, for frying3 tablespoons

In a bowl, combine the drained salmon, panko breadcrumbs, beaten egg, diced bell peppers, chopped onion, Cajun seasoning, cayenne pepper, salt, and black pepper.

Mix gently until all ingredients are incorporated. Do not overmix.

Form the mixture into 4-6 patties.

Heat canola oil in a large skillet over medium-high heat.

Cook the patties for 5-6 minutes per side, until deeply golden brown and cooked through.
