Ingredients
- Penne pasta1 pound
- Olive oil2 tablespoons
- Onion, finely chopped1/2 cup
- Garlic, minced3 cloves
- Crushed tomatoes28 ounces
- Heavy cream1/2 cup
- Vodka1/4 cup
- Red pepper flakes1/4 teaspoon
- Saltto taste
- Black pepperto taste
- Parmesan cheese, grated1/4 cup
- Fresh basil leavesfor garnish

Cook penne pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

While pasta cooks, heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and red pepper flakes, and cook for 1 minute more until fragrant.

Pour in the vodka and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.

Stir in the crushed tomatoes. Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally.

Stir in the heavy cream and grated Parmesan cheese. Season with salt and black pepper to taste.

Add the drained penne pasta to the sauce. Toss to coat evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
