  • Chicken or vegetable broth4 cups
  • Miso paste (red or white)1/4 cup
  • Soy sauce1 tbsp
  • Mirin1 tbsp
  • Garlic powder1/2 tsp
  • Ginger powder1/4 tsp
  • Ramen noodles2 servings
  • Pre-cooked chicken or tofu4 oz
  • Eggs2
  • Scallions2 tbsp, chopped
  • Nori seaweed1 sheet, cut

Steps

    In a pot, heat the chicken or vegetable broth. Whisk in miso paste, soy sauce, mirin, garlic powder, and ginger powder until dissolved. Do not boil after adding miso.

    Cook ramen noodles according to package directions. Drain.

    Hard-boil eggs and slice in half.

    Divide cooked noodles between two bowls. Ladle the hot miso broth over the noodles.
