Ingredients

  • Udon noodles400g
  • Japanese curry roux blocks100g
  • Dashi stock800ml
  • Soy sauce2 tbsp
  • Mirin2 tbsp
  • Onion1/2
  • Scallions2 stalks

Steps

    Cook udon noodles according to package directions. Drain well and set aside.

    Thinly slice the onion.

    In a pot, heat a little oil (optional, if not using non-stick) and sauté the sliced onion until softened.

    Add dashi stock to the pot and bring to a simmer.

    Break the curry roux blocks into pieces and add them to the simmering dashi. Stir until the roux is completely dissolved and the sauce thickens.

    Stir in soy sauce and mirin. Taste and adjust seasoning if necessary.

    Add the cooked udon noodles to the curry sauce and gently toss to coat.

    Serve hot in bowls, garnished with chopped scallions.
