Ingredients
- Chicken thighs and drumsticks2.5 lbs
- Olive oil2 tbsp
- Garlic cloves, whole1 head
- Chicken broth1 cup
- Lemon juice2 tbsp
- Dried oregano1 tsp
- Fresh parsley, chopped2 tbsp
- Saltto taste

Pat the chicken pieces dry and season generously with salt and pepper.

Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.

Sear the chicken pieces, skin-side down first, until golden brown on all sides. Remove chicken and set aside.

Add the whole head of garlic (top sliced off) to the skillet. Sauté for 1-2 minutes until fragrant.

Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.

Stir in the dried oregano.

Return the chicken to the skillet, nestling the pieces into the liquid.
