Ingredients
- Mixed vegetables (potatoes, cauliflower, peas, carrots, bell peppers)4 cups, chopped
- Onions, finely chopped2 medium
- Tomatoes, pureed2 cups
- Ginger-garlic paste2 tbsp
- Pav Bhaji Masala3 tbsp
- Turmeric powder1/2 tsp
- Red chili powder1 tsp
- Cumin seeds1 tsp
- Butter4 tbsp
- Oil2 tbsp
- Saltto taste

- Pav (bread rolls)8
- Fresh coriander, chopped (for garnish)2 tbsp
- Lemon wedges (for serving)4

Boil and mash the mixed vegetables until soft. Set aside.

Heat oil and 1 tbsp butter in a large pan. Add cumin seeds and let them splutter.

Add chopped onions and sauté until golden brown.

Add ginger-garlic paste and sauté for a minute.

Add pureed tomatoes, turmeric powder, red chili powder, and salt. Cook until oil separates from the masala.

Add the mashed vegetables and Pav Bhaji masala. Mix well. Add water as needed to achieve a thick gravy consistency.

Cook for 10-15 minutes, stirring occasionally, until the bhaji is well-cooked and flavors meld.

Meanwhile, toast the pav on a tawa (griddle) with butter until golden brown and slightly crisp.

Serve the hot bhaji garnished with a dollop of butter, chopped coriander, and a lemon wedge. Serve with the toasted pav.
